I met Henri Colcombet a month ago when he was in Dallas promoting his Champagne. The encounter was easy going with a very fresh conversation about his Champagne. 

After a 30-year long career working with luxury goods and brands, he got his training at houses like Remy Martin, Charles Heidsieck, and Krug Champagnes. Taking after the example of his father and family on gourmet business, he decided to launch his own small production champagne brand and began to promote it among friends and old colleagues in 2016.

He currently makes 2000 cases a year and bottles four lables, including a Rosé and a high profile reserve named “Vogue” that he cellars for 48 months before releasing it. “My champagne is made for the immediate and easy enjoyment, it makes the best aperitif drink and it’s delicious with food”. It was the truth.

Days after I met him, I was able to have both the Rosé and the Brut Eclat, which were absolutely fabulous, with fresh, fruity notes, great acidity and elegant, creamy textures with violet and pomegranate notes.

NV Colcombet Champagne
Réserve Privée Brut Rosé

sheer mouthfeel, red berry aromas
and crisp green apple palates.
Light acidity, light body, finish is smooth
with zesty green citrus peels lingering.

This bottle has potential with food pairing!
Best with Italian strong flavored pasta
in calamari, squid, octopus, mussels
and seafood stews.

For Japanese cuisines, 
Cured Tuna / Maguro Zuke,
Cured Salmon roes/ Ikura Zuke
and red raw fish sashimi presenting
iron-ish flavor like Saba,
should pair well with this bottle.

It's a delightful young NV,
but seriously a mysterious bottle!
No other wine notes seen on earth

How I met this bottle?

That noon, we were gonna have a whisky first! But they were out of
1990 Glendronach by Silver Seal.
As time is limited,
we moved on for Champagne!
I recently fond Rosé Champagne,
this was the only Rosé bottle
they have in this micro wine bar~

Not much info about this winery,
no grapes ratio, no terroir statements..
Maybe it's an independent champagne bottler?! 🤔

I spot his bottles in 2017 Asia Best 50 restaurants, no.16 - Les Amis's wine list.

Mr. Henri Colcombet just held
a champagne tasting event last Sept
in Dallas Dolce Riviera.
I feel he strives his bottles
distributing more in Haute Restaurants.
I haven't tried out the other three champagnes. but for Rosé, it sure does shine along with food pairing.
